Opa! Don’t worry if you hear this in a busy Greek restaurant and see a plume of fire. Someone is probably warming up a tasty order of Saganaki. We’re not employing a metaphor or building up a new word when we say “fried cheese.” Saganaki is a hard cheese cooked until the top is golden brown, ignited with Greek liquor, and extinguished with lemon juice. The flambe method is used in kitchens worldwide but rarely at the table. This is one reason why Saganaki is so famous to eat and look at. It’s salty and tasty, and it gives people a show.

Like Spanakopita, Tiropita is a tasty pie made with filo dough. As with most meals made with yogurt, it’s interesting how well the different kinds of cheese go together in Tiropita. Feta is the major cheese in many Greek dishes, but because it is tangy and sharp, it might be too much in a dish like Tiropita. The answer is to add heavier cheeses, like gouda and ricotta. The exact mix of sweet and sour flavors in a cheese pie depends on where you taste it, but my favorite ones have a good balance of both.
Courgette Balls are deep-fried spoonfuls of zucchini that give them a nice texture. Kolokithokeftedes make a strong protein ball with zucchini, egg, and feta. They could be thought of as meatless meatballs. Feta is a Greek cheese that is utilized in a lot of Greek recipes. It gives this dish a salty taste and a different texture. Spices like toffee and pepper are included in the blend to balance out how full and salty it is. When you cook the zucchini balls, the outside gets crunchy, and the inside gets soft and delicious. You can consume them hot, but they will stay hot for a long time, so let them sit before you do.

If you are a vegan, you may wish to cut the leaves apart and inspect the interior before eating them. Lemon juice on top of dolmade is my favorite way to eat them. When served with canola oil, your dolmades will almost seem to get their dressing from the lemon juice, which cuts through the lushness of having to fill.

In other regions of the Ottoman area, sugar is used. When Greek Baklava is eaten right away, it is softer and smoother.
